I remember reading vaguely that Guruji meditated upon each devata in the Sri Chakra and instructed the sculptor on the details. Can we have some information to understand that? What each deity represents physically and metaphorically?

I remember reading vaguely that Guruji meditated upon each devata in the Sri Chakra and instructed the sculptor on the details. Can we have some information to understand that? What each deity represents physically and metaphorically?
Unfortunately we don't have the descriptions of symbolisms of every single deity in the Meru Temple. You can read Guruji's "Understanding of Sri Cakra Puja" (which has also been included in Michael Bowden's "Gifts from the Goddess" book) where he describes each enclosure and its symbolism.
There are also number of playlists on SoundCloud where Guruji is talking about the symbolisms of Sri Cakra its enclosures and deities.

what are these mantras? i mean, i can relate many to each. but not sure which matras Guruji is refering

Upasana of Śyāmā, Vārāhī and Parā along with their mantras are contained in Paraśurāma Kalpa Sūtra (more information can be found here). These practices are given to Śrī Vidyā practitioners after they completed their Mahāgaṇapati and Bālā Upāsana.
