Does anyone have any text/video/audio and mantra given by Guruji on the worship of Gopala Sundari - instead of Shiva Shakti, this is the form of Krishna and Maa Lalita Tripurasundari.

I have not encountered any references in his teachings—whether in text, video, or audio—regarding Gopālasundarī.
That said, it is always possible that he may have given such instructions privately to specific individuals.
